Sushi and Tennis With Kei Nishikori

I was honored to give Japanese tennis mega star Kei Nishikori a lesson on how to make sushi in return for a few tennis tips during the ATP Delray Beach Championships.

Kei qualified for Delray Beach in 2008 and became Delray champion that year at the age of 18!  In 2011, he reached the semi-finals. The ATP Delray Beach Championships takes place from Feb. 17 – Feb. 23, 2014 in Delray Beach, Florida. Keep up with the scores and schedule here.

Super Bowl Shrimp Nachos

Super Bowl XLVIII is almost here.

Whether you’re a Seattle Seahawks fan, Denver Broncos fan or just a fan of Super Bowl commercials, great food is essential to any Super Bowl party. One of my favorite snacks during the Super Bowl is nachos.

Below is my recipe for Shrimp Nachos. I’ve even included my recipes for homemade Guacamole, Ranch Dressing and Gochujang Aioli. They’re sure to spice up your festivities.

Shrimp Nachos

Ingredients
2.5 oz Baby Shrimp (size 71-90  or cut into bite size pieces)
1 oz Tempura Batter (see recipe below)
1 oz Gochujang Aioli (see recipe below)
.3 oz Ranch Dressing (see recipe below)
1.5 oz Guacamole (see recipe below)
2 6″ Yellow Corn Tortillas (cut 6 pieces, deep fried until crispy)
2 Cherry Tomatoes (diced small)
3 Kalamata Olives (diced small)
1/4 Jalapeno (sliced thin)
Micro Cilantro (or regular cilantro leaves)
1/6 Lime

Dust baby shrimp in all-purpose flour lightly and submerge them in the tempura batter.  Drop one piece of shrimp at a time in canola oil set at 350 degrees Fahrenheit for about 3 minutes, or until lightly golden brown.  Take out the fried baby shrimp and toss in a mixing bowl with a pinch of kosher salt.  Lay the crispy tortilla chips evenly on a plate and using a squeeze bottle, sauce the chips with gochujang aioli.  Then, lay fried baby shrimp on top of the chips and sauce again with gochujang aioli and ranch dressing.  Garnish with cherry tomatoes, kalamata olives, jalapeno and micro cilantro and a piece of lime wedge.

Tempura Batter
1/2 Egg
1 cup Soda Water
.9 cup Tempura Flour
1/2 tsp Grape Seed Oil

Whisk egg and grape seed oil in a mixing bowl and add to cold soda water.  Put tempura flour into a mixing bowl and create a well in the flour.  Add the cold soda water/egg/grape seed oil mixture into the well and whisk until batter is smooth.

Gochujang Aioli
1 cup Mayonnaise
.2 oz Lemon Juice
.6 oz Gochujang (Korean chili paste)
.4 oz Condensed Milk
.3 oz Sugar
1/2 tsp Korean Chili Flakes
1 tsp Grand Marnier
To taste Kosher Salt

Combine all ingredients into a mixing bowl and whisk until Korean chili flakes is evenly distributed.

Ranch Dressing
8 oz Sour cream
1/2 cup Buttermilk
1 tsp Kosher Salt
1 tsp Lemon Juice
1 tsp White Wine Vinegar
1 pinch Garlic Powder
.1 oz Chopped Dill

Combine all ingredients into a mixing bowl and whisk until smooth.

Guacamole
3 oz Avocado
1 oz Salsa Verde (see recipe below)
1 tsp Chopped Ginger
1 tsp Powder Wasabi (add 1 tsp water and mix together until paste)
1 tsp Soy Sauce
1/4 Lime Juice
1 Tbsp Chopped Cilantro
1 tsp Chopped Serrano Chili Pepper
1 tsp Olive Oil
To taste Salt

Combine all ingredients into a mixing bowl and mix

Salsa Verde
2 oz Tomato Verde
.5 oz Onion
1/2 ea Serrano Chili Pepper
1/2 tsp Chicken Bouillon Powder
1/10 cup Cilantro Leaves
To taste Salt

Combine all ingredients into blender mix together.

Enjoy them while you cheer on your favorite team!

For the month of November, my Morimoto restaurant in Philadelphia, PA will be donating 10% of all dessert sales to the Prostate Cancer Foundation. Additionally, our pastry chef Thomas McCarthy has created a special Peanut Chew ice cream. We will be selling this special ice cream in pints and donating 100% of the revenues as well to this worthy cause.

We are running this special promotion in memory of Carl Goldenberg, who passed away on Oct. 14 of prostate cancer. The Goldenberg family has been making Peanut Chews in Philadelphia since 1917.

I hope you all had as much fun as I had this weekend!

The Food Network‘s NYC Wine and Food Festival took place this past weekend and I was involved in three great events. On Friday night I hosted the “Rockin’ Dumplings and Rollin’ Sushi” presented by Eater at the Harvard Club. I had such a wonderful time singing karaoke and catching up with old friends. Thank you to everyone that attended, I look forward to seeing you again next year.

I also participated in the Grand Tasting presented by ShopRite on Saturday. I demonstrated what you can do with a 115 lb Hawaiian Big Eye Tuna with my head sushi chef from Morimoto NYC. Thank you to everyone that came to the demonstration.

My final event of the weekend was the Master Sushi Rolling Class at Morimoto NYC. I had so much fun sharing my tips and tricks with the attendees. I will share a couple of tips with those of you who could not attend. Tip #1: Don’t mix wasabi in the soy sauce! Tip #2: Roll sushi like a cat, as demonstrated here.

I can’t believe it’s been almost a year since the last Food Network NYC Wine and Food Festival. My friends and I had such a great time at last year’s karaoke event that I can’t wait to do it again. For everyone lucky enough to grab tickets to this year’s sold out “Rockin’ Dumplings and Rollin’ Sushi” presented by Eater on Friday, Oct. 18 at the Harvard Club, you’re in for a great time. We have an amazing  line-up of chefs for this late-night walk-around tasting of Asian-inspired small plates like Ming Tsai, Jose Garces, Kerry Heffernan, Jacques Torres and many more.  Here’s a few photos from last year.

In addition to the “Rockin’ Dumplings and Rollin’ Sushi” event, I am participating in two other events that still have tickets available.  I will be at the Grand Tasting presented by ShopRite on Saturday, Oct. 19 at Pier 94 where I’ll be doing a cooking demo on the South Stage at 1:15 pm. Then on Sunday, Oct. 20 at 1:30pm, at my restaurant Morimoto,  I will be doing a Master Sushi Rolling Class.

The First Pitch

Dear Friends,

I had the great honor to throw out the first pitch Monday, Aug. 12 when the Chicago White Sox took on the Detroit Tigers at U.S. Cellular Field in Chicago.  I loved baseball growing up and used to play in high school. It was nice to be back in a ballpark and enjoy my favorite food during a baseball game, a hot dog with a beer.

I also ran into my dear friend Mario Batali. We will both soon have locations opening in Chicago with my new partnership with Japonais.

Dear Friends,

They say, “What happens in Las Vegas, stays in Las Vegas,” but I hope that isn’t the case with my new restaurant, I hope you tell all your friends about it.  I’m so excited to be making this dream of mine into a reality with the launch of my first restaurant in Las Vegas.  We will be opening in 2014 at The Mirage Hotel and Casino in the space currently occupied by Japonais (please see the announcement press release here).
